I had the pleasure last night of hitting up Publix for their current Viva Italia sale! All kinds of great Progresso, Hunt’s and Pilsbury products on sale to help me make a meal my Italian mom could be proud of!
My first stop was the Publix Viva Italia Sale page! I needed inspiration and I found some mouth watering recipes. When I saw the Lasagna Soup Insalata with Cinnamon Peach Crescents, I knew we had a winner!
The displays with sale items are clearly marked. Be sure to look out for the display on the right in the picture below – it had all kinds of coupons for products that are already on sale! Score! The sale runs through March 2nd.
I spotted a section that had some Italian sausage out. Oh, and here’s the pasta I need! Wait, here’s the crescent rolls! Y’all, they had everything I needed for that one recipe in one display, with the recipe in front. Shopping perfection.
I gathered up all the ingredients on my counter and went to work.
This is brilliant. I cannot do chopping onions; they kill me. In fact, I never seem patient enough to chop things small enough. I was so happy to see this mix all ready to go!
First up was Italian sausage, carrots and that easy peasey trinity mix.
Next up, the liquids: Hunt’s tomato sauce, Progresso chicken broth and Classic pesto.
The final ingredient that makes this so quick is the mini cheese ravioli.
While the soup was finishing up, I got started on the Cinnamon Peach Crescents
Y’all. Both my son and I kind of burned our mouths a little because we couldn’t wait for these to cool down before we tried them. So. Good.
Definitely head to the Publix Viva Italia site for savings, but here’s a sampling of the coupons you can find in-store as well! There are coupons for up to $9.50 in savings on the display.
The finished product! I admit – I was not enthused about the kale greens and ricotta in the soup. I mixed them in, though, and it was excellent. The greens wilted just right and the ricotta thickens up the soup perfectly. I’m not the world’s best cook, but I will tell you that this was delicious!
And, like a good mom, I saved the box top I found on the Progresso broth carton!
